Ingredients

• 2 large chicken breasts (butterflied)
• ½ cup shredded mozzarella or provolone
• ¼ cup cream cheese (optional, for richness)
• ½ red bell pepper, thinly sliced
• ½ green bell pepper, thinly sliced
• 1 tsp garlic powder
• 1 tsp smoked paprika
• ½ tsp black pepper
• ½ tsp sea salt
• Olive oil

Instructions

1. Preheat oven to 375°F.
2. Slice chicken breasts horizontally to create pockets.
3. In a bowl, mix cheeses and sliced peppers.
4. Stuff each chicken breast generously.
5. Rub outside with olive oil, salt, pepper, garlic powder, and paprika.
6. Place in baking dish, cover loosely with foil.
7. Bake 25 minutes, then uncover and bake another 10–15 minutes until golden and cooked through.
8. Rest 5 minutes before serving.
