Stuffed Red & Green Bell Peppers with Rice, Broccoli & Cheese

Ingredients

• 2 red bell peppers
• 2 green bell peppers
• 1 cup cooked rice (white or brown)
• 1 cup chopped broccoli (lightly steamed)
• ½ cup shredded cheddar or Colby Jack
• ¼ cup cream cheese (optional)
• 2–3 strips turkey bacon, cooked & crumbled
• 1 tsp onion powder
• 1 tsp garlic powder
• Salt & pepper to taste
• Olive oil

Instructions

1. Preheat oven to 375°F.
2. Cut tops off peppers and remove seeds.
3. Mix rice, broccoli, cheeses, turkey bacon, and seasonings in a bowl.
4. Lightly oil peppers and place upright in baking dish.
5. Stuff peppers firmly.
6. Cover with foil and bake 30 minutes.
7. Uncover and bake 10–15 minutes until tops are lightly browned.
